Pumpkin cupcakes with cream cheese frosting

Having six pumpkins in the house has made me a little pumpkin crazy. I'm envisioning pumpkin pies, pumpkin creme brulees, pumpkin bread pudding, and pumpkin cupcakes. Unfortunately, they didn't come out how I wanted (as usual, when I bake). I started piping pretty swirls with the frosting, but the swirls required too much frosting, and the sight of that much frosting on each cupcake made me ill. So instead, there's just a smear of frosting on them. Not as pretty, but more edible, I think. Only if you like cream cheese though. Unfrosted ones for those of you who don't.

  • Yum, I love pumpkin stuff with cream cheese frosting. Bottom of mine (foil wrapper) was a little overbaked, like kind of a dark brown and tasted not-as-sweet. But, still quite tasty.

  • I thought I wouldn't like the cream cheese frosting, but it actually works really well!! I'm not a dessert expert but my first reaction to the fact that it's cream cheese was-- yuck. But I tried it, and it was great. I bet I would like it better if I didn't know it was cream cheese. =) Very delicious and moist.

  • The cupcakes tasted like home made Pumpkin Bread, my mom would be upset that I like yours better. The frosting was good but I was not told it was cream cheese so I was surprised to find it not as sweet as I had expected. I would compare the cupkaces to something like a banana nut bread, I would buy it if it came in a loaf or cake option!
