raspberry tartlets

a little different from before...tartlet shells are brushed with chocolate, filled with pastry cream, topped with raspberries glazed with red currant jelly. whew! unfortunately, they don't taste as sassy as they look :)

  • Very ingenious way to include natural form of fruit into recipe and display. Looking at the treat, a consumer feels good about eating a real piece of fruit. The pastry shell and paste were not too overwhelming either, letting the taste of the berries over-rule. She syrup/sauce on top of the Rasberries is a good way to ensure the tarts aren't too sour. I usually never eat anything with berries but this treat I am definitely a fan of.
